We are so fortunate to live in a community that values the benefits of vibrant health, and to have had the great good fortune to have 'sat at the feet' of several of the masters in the health movement over the years. One of the most impressive persons we met was the originator of the Green Smoothie, Victoria Boutenko.

Victoria arrived in the U.S. from Russia with her husband and two young children over twenty years ago to take up a teaching job at a college in Colorado. All of the family members had dire illnesses-- and they had tried many, many ways to overcome these conditions from standard physician's care to alternative medical procedures. Nothing seemed to work.

Victoria is a proficient researcher and in the course of her research discovered the magnificent mineral- and vitamin- laden Greens-- those tender leaves that people traditionally call "vegetables"-- everything from backyard/woods/garden-type weeds-- purslane, lambsquarters, dandilion for example-- to undervalued but super-nutritious kale.  She also noted that the wild chimpanzee, the primate with the most genetic similarity to humans (approximately 99% of shared genes), had a virtual immunity to diseases such as cancer, HIV, and other life-threatening disease common among humans.  The most glaring difference appeared in the way we eat: wild chimpanzees eat about half of their diet in fruit and almost another half is greens and blossoms.  Humans following the S.A.D. (Standard American Diet) consume less than a quarter of their diet as greens and fruit.

So, it seemed clear to Victoria that the key to enhanced health and strength lay with a diet high in greens and fruit.  Unable to 'stomach' (or adequately chew) large enough quantities of greens to satisfy her nutrtional requirements, in 2004 Victoria was pleased to discover that blending greens and fruit (and water) in about a 50-50 ratio resulted in a delightful, refreshing and healthful drink that she called "The Green Smoothie".  The family began to experience amazing health changes that included overcoming their issues with asthma, diabetes, and heart disease as long as they consumed about two quarts of green smoothie (along with a plant-based, largely raw diet) each day.
