Avocado Smoothies

Today I thought I would try an avo smoothie since we have a few of those little green eggs in our pantry... Avocado makes smoothies sooooooooo smooth (as in silky smooth and thick) and have healthy belly-fat-fighting properties.  When I tried to get at the recipes, I got locked into either abandoning what looked like a pile of fantastic recipes OR signing up for a newsletter that I don't want... because down came a pop-over or pop-up with NO way to exit or get at the recipes.  Grrr.... Ah well, life is too short to go on and on about that.

Here is a sample recipe, with adjustments of my own (like, who needs ice cubes when you can use frozen fruit instead? and out with extra sweeteners and dairy, wherever possible):

AVO-PEAR SMOOTHIE
1 large pear, chopped
1/2 cup frozen green grapes
1/4 avocado
1 teaspoon lemon juice
Cold Water to level wanted
**Spin all the above up in your Vitamix! (serves 1 or 2)

Avo Tropical Custard Smoothie (Vegan, Gluten-Free)

Avo-Tropical Custard Smoothie-- drink it or spoon it! Yum!

Oh Yum! This Avo-Tropical-Custard-Smoothie is just the ticket if you are looking for something to consume that is refreshing and sweet (but not cloyingly so like the butter tarts and chockies you have eaten too many of over the holidays).  Besides the water, it is 100% fruit (including the avo and the coconut shreds).  I added a small packet of "Sweet Leaf" Stevia powder, but that was likely gilding the lily-- you could drink it fine without!  You could adapt it, too, by making it with coconut milk instead of water, and it would truly be a custard pudding effect then!  But here is the way I made it this morning:

  • 1 C. Frozen Pineapple chunks (fresh would be great)
  • 1/2   Ripe Avocado (flesh only, of course)
  • 1/4 C. Coconut Shreds (unsweetened)
  • 1 Ripe Banana
  • Juice from 1 Fresh-squeezed Lime
  • 1 "Sweet Leaf" Stevia Packet (no after-taste, no calories, no weird additives)
  • Water to suit

Chai Pumpkin-Spice Avo-Banana Smoothie

This is a significant birthday for my dear husband.  It is a "longevity" marker, and if I say that we have been married going on 45 years and married young, you likely can guess his age?  He has been taking a class from the local ElderCollege about Age Reversal with a focus on Ayurvedic (Indian) wellness and longevity.  So, we have re-introduced butter (as in "Ghee", clarified butter) into our was-vegan life, and lots of exotic herbs and spices (eg., Turmeric, Ashwagandha, etc.)  I thought that a sort of "chai" smoothie would be lovely for the morning smoothie (and he has a meeting, so it will give him a boost before he goes off to that and should keep him energetic, sharp as a tack, and not hungry until lunchtime).  Here it is (recipe for two people):

Put the following ingredients into a Vitamix, or in batches into a less workhouse blender:

1 ripe Avocado
2 C. non-dairy Mylk + Filtered Water (you decide how much of each)
2 frozen Bananas
3 T. Maple Syrup, or more to taste OR/AND 1 packet of Sweet Leaf Stevia (to taste)
2-3  tsp. Pumpkin Pie Spice
1 tsp. Turmeric Powder
1 tsp. Ashwagandha Powder
(A cup of icy chai tea might be a great addition-- I haven't tried that yet)

Blend until smooth and silky like a really great Pumpkin Pie custard!  If a spoon stands up in it and you would like it a little thinner, then add more Mylk or Water.

Blackberry-Fig-Avocado Smoothie-- Vegan, Dairy-Free, Gluten-Free, Ambrosia

Follow Me on Pinterest You know that I don't like to boast about all the fruit we are harvesting in our yard... you do know that, right?  Well, please forgive me today... I just can't help it... and I can't take the credit either, of course... that belongs to God!

Last year our son, the veggie farmer, looked over the pathetic little fig tree, the one that seemed to be 'cursed' (read Mark 11:13-14) and went about laying down some necessary lime and other minerals.  He said, "Watch it-- it will take off for you!" and, behold, he was right on.. this year the fig tree that had never treated us to more than 1 or maybe 2 fruits in the previous 6 years, suddenly produced a minor boom crop this year.  These are Green Figs, so while they look less ripe than Brown Figs, they are soft, and sweetly delicious.  My husband adores figs-- you might say he is a Fig Pig-- so I am also very happy that he gets to harvest and eat them before he goes out onto the North Coast Trail hike with his friend Brian in a few days. (He would have been so disappointed had he missed the ripe figs while on the hike).
So juicy sweet!
Okay, on with the Smoothie Recipe: (for about 20 oz. of Smoothie)

Combine the following in a high-speed blender (or other blender, in two batches):

  • 3 ripe, juicy Figs (minus the tough stems)
  • 1 C. Blackberries (I used frozen ones for the ice appeal)(Regular Raspberries would also be delish!)
  • 1/2 ripe, soft Avocado flesh
  • 1 C. Nut Mylk (as you can see, I opted for ready-made Almond Breeze-- use what you like)
  • Water as desired (I like to bulk mine up with water-- so hydrating)

Thoroughly enjoy this Smoothie by God*

Persons with Type 2 Diabetes who are trying to eat as healthy as possible from the Plant-based regimen will be happy to know that this is a body-friendly grouping of fruits, that, in season (do not eat the high glycemic dry figs and eat the fruit raw),  fresh and ripe, will just make you feel lovely in this smoothie!  Enjoy!

Nettles in my Smoothie!

Vibrant Nettle Leaves impart the same energy to YOU when you use them in a smoothie!

I was out in my yard this morning and spotted the ingredients for one of my favourite Spring smoothies-- planted during an effort at being more fully  locavor -- Stinging Nettles!  Yes, they are usually run from instead of being seeded in your own yard, but I have my healthy, gardening son to thank for this anomoly, and I do thank him.

We are very blessed to live where we do, but there are many ways to achieve the same outcomes, even if you live in an apartment in a concrete jungle of a city.

So, here is that favourite smoothie recipe:

**a handful of fresh Nettle leaves
**a cup or more of frozen Dark Sweet Cherries (or other fruit)
**6 Celery ribs, chopped
**1 small ripe Banana (or 1/4 soft, ripe Avocado)
**1/4 C. Chia seed Gel

Spin up in your high speed blender (or do up in a couple of batches in other blender) until smooth and creamy.  Enjoy!  And enjoy the energy spurt!
This nettle is not the only thing I find under a rock in my yard!

Smoothie of the Week: Avo-Strawberry Smoothie

Avo-Strawberry Smoothie @pixabay

Here is a heart-healthy, fat-fighting smoothie that tastes very yummy (even though it might seem like a weird combination of fruits):

  • flesh from one really ripe Avocado
  • 6-12 ripe Strawberries
  • Handful of ripe Cilantro (or other green of choice)
  • 1 tsp. Barley Greens (Vimergy recommended by Anthony William)
  • Water for quantity/thickness desired
  • Thought: Mango would taste good in this combo
Blend up.... will blend well in any good blender.  Enjoy!

Smoothie of the Week: ABC Smoothie

I was with a group of people last week talking about refreshments we would serve after a presentation we were hosting. We wanted the said refreshments to reflect upon our support for healthy living, so out went coffee, Black Forest cheese cake, and the like.

Someone suggested fruit trays. Another pointed out that people get as much of a glycemic surge with several pieces of fruit as they do with a cookie.

It got me thinking about fruity smoothies... and today's recipe is for a smoothie that is sweet, without being cloying, but made with blackberries and mostly greens. There is no banana-- just an apple and an avocado. It is smooth, flavourful, and creamy delicious... isn't that what one wants in a smoothie? Oh yes, and extrememly healthy!

Put the following in the carafe of a Vitamix and whirl up together until smooth and creamy:

  • 2 C. frozen organic Blackberries (or other low glycemic berries)
  • 1 handful fresh organic Cilantro
  • 1 small, very ripe Avocado
  • 1 4" piece of fresh Aloe Vera (if you have it- and peel off/discard the outer layer of skin)
  • 1 small organic Apple, cored
  • Stevia to taste (if desired)

Smoothie of the Week: Dates With A Sweetie

 Dates with a Sweetie:
I couldn't help being a little silly with today's smoothie title... this is by far the sweetest little smoothie I've ever made... sweet and smmmooooth!

Put the following in your Vitamix cannister:
  • 1/2 Bunch (large handful) organic Cilantro
  • 1-2 C. Fresh Pineapple Chunks
  • 4 Medjool Dates, pitted
  • 1 C. Frozen organic Berries (I used Blackberries)
  • Water from a Young Thai Coconut
  • 1/2 ripe Avocado flesh
  • 2 T. ground organic Flaxseed
  • Filtered Water to amount desired (I fill the cannister)
To your better and better health!
